Making and Freezing Apple Pie Filling and Apple Sauce

Fall is apple season on the East Coast, and I like to buy a bunch of Gala apples from a local orchard. When I bring them home, I like to make applesauce and apple pie filling and freeze them.

It’s a really simple process and saves a lot of money – I take a day off work and do it all in a few hours. When I buy apples, I buy them in large quantities and check for bad pieces. Avoid apples that have been exposed to heat for a long time. Any bad pieces that appear should be cut off.

The following two recipes were taught to me by my grandmother in the 1980s and I still use them today.

Apple Pie Stuffing Recipe

  • 4-6 apples
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon juice

Wash the apples and dry them. Apples should be peeled, seeds removed, and cut into slices. Combine the slices, granulated sugar, and 1 teaspoon of lemon juice in a medium bowl. Gently toss to coat apples with sugar and lemon juice. Place the apples in a freezer bag or plastic container, leaving 1/2 inch of space between the apples.

Note: the lemon juice can be replaced with fresh fruit or another anti-shadow.

Recipe for apple sauce

  • 4-6 apples
  • water
  • 1/2 cup granulated sugar
  • 1 teaspoon of lemon juice
  • 1 teaspoon of cinnamon

Wash the apples, peel, core, and cut into small pieces. Place the slices in a pan with enough non-stick water. Add granulated sugar, lemon juice, and cinnamon. Turn the burner to low and cook slowly until the apples are cooked and tender. Pour off the remaining water. Place in a blender or food processor until the apples are pureed. Once cooled, spoon them into a freezer-safe container, leaving half a centimeter of space. If desired, sprinkle with cinnamon before closing.
